We know a thing or two about corn down here in the Bayou believe it or not. In fact corn, eaten as grits, is a staple of the South. Due to the strong Spanish influence in and around Louisiana, we have learned how to do wonders with corn. Our corn tortillas are larger and thicker than the rest and we use Old World recipes and techniques to keep these simple and tasty.
